LOW CALORIE GLUTEN FREE PANCAKES


To be honest, pancakes are one of my all-time favourite things to make for family breakfasts on Sundays! I love them so much I even make them for dinner sometimes. I find that they set me up for the day really nicely, kill my sugar cravings and stop me snacking. Here is my usual every day gluten free low calorie option which I hope you enjoy.

Yield: Up to 12 pancakes
Ingredients
3 (large) egg whites
1 1/2 cups Gluten free plain white flour
4 cups of milk
Coconut oil (instead of vegetable oil)
1 lemon
3 tablespoons of Xylitol
1 1/2 teaspoons kosher salt
Unsalted butter
Fruit of your choice, diced, for serving 
Honey (or Maple Syrup)
Directions
1. Sift together the flour, sugar and salt.
2. Melt 1 tablespoon of butter in the microwave until it melts (Cover the butter to ensure it does not get everywhere)
3. Add together the milk, butter, eggs, and mix until combined.
4. Lader pancake batter into a pan coated with a little coconut oil to avoid sticking.
6. Cook for about 3 minutes, until bubbles appear on top and the underside is nicely browned.
7. Flip the pancakes and cook for another minute or 2 until browned. 
8.  Wipe out the pan with a paper towel, add more coconut oil to the pan, and continue cooking pancakes until all the batter is used.
9. Serve hot with sliced fruit and honey (or maple syrup). The whipped cream is optional but I thought, sure why not!

This morning I had two, bringing my calorie consumption to roughly the same as my bowl of porridge! Do let me know what you think of this recipe.
